hi friends! short week this week, so my normal grocery shopping looked a little different. i did take advantage of target’s “spend $50 on groceries, get a $10 gift card” deal. three times. anyways, with this being a weird week, i wanted to share what’s on the menu for thanksgiving week.
monday: leftover buffalo chicken spaghetti squash casserole. i tried a new recipe lately and it was AWESOME. it’s definitely going to be something to add to our rotation. it’s a little time consuming with roasting the spaghetti squash ahead of time for a recipe that takes 40-45 minutes to bake already (not to mention the chicken prep time — i shortcut that with buying a rotisserie chicken and just shredding myself), but you can do a lot at once and it lives well in the refrigerator.
tuesday: sheet pan meal. this one is always on rotation in our household, with the contents being different. this week it’s chicken sausage and brussel sprouts, since i’m on a brussel sprout kick lately.
wednesday: zoodles/banza pasta + salmon. we are doing the turkey trot the next morning, so i don’t want to be too weighed down before walking that! banza pasta/zoodles it is.
thursday: turkey day! we are bringing some form of brussel sprouts (thinking these or these) and possibly a dessert. we go to at least two thanksgivings every year, with both of our families living close, so i try to bring something that’s universally appealing and that i can make in bulk.
friday: since we usually get our tree on friday, it’s going to be leftovers and ‘scrounging’ for sure. ‘scrounging’ is our word for ‘keep the kids fed and just stand in front of the refrigerator and eat whatever sounds good.’ kind of like college kid life, but with kids involved.
i’m also going to be sure to keep up with my normal workouts, adding some mirror workouts in where i have time. i’ve been eating more baked goods and sweets lately, and it’s catching up with me. knowledge is power, though, and i’m going to try to still enjoy myself while feeding myself foods that are good for me.
also on my list of things is some self care this week, since holidays can be nuts even with the best of families. on the docket? some new makeup and skincare from beautycounter (seeing what the hype is about!) and some epsom salts for my bath. seems simple, but sometimes the simplest things can keep us the most sane 🙂

I love sheet pan meals! When I make chicken sausage, in addition to a veggie, I add thinly sliced apples to it with some rosemary seasoning. It is a different combo but tastes so good!

I ended up using apples in my sheet pan bake last week – such a great idea and SO delicious! Any tips/tricks on how to get them not to stick to the sheet pan once they get a little warm?
