it’s no secret that i have been trying to be more thoughtful about our dinners and plan them out ahead of time, so as to keep them *relatively* healthy and change them up enough so that we don’t get bored. today i wanted to share one of my tried and true faves that has made its way into our weekly rotation.
shrimp + [cauliflower] “grits” on a bed of arugula
this one is inspired by this cookbook [worth every penny – and then some – just for the ideas!!], and i just tweaked a few things for my family’s tastes and added the bed of arugula because, again, feed the gut bugs.
- trader joe’s argentinian shrimp [found in the frozen section]
- trader joe’s mashed cauliflower [i bought out their stash last time i went. this stuff is SO easy to make, SO good, and my kid eats it. it might as well be gold]
- goat cheese [add to the cauli grits while they are cooking to give the taste a little extra flavor + add some extra creaminess!]
- arugula, dressed with garlic olive oil [optional, but makes it MUCH better tasting and more visually appealing]
cook each element as instructed and assemble with arugula on the bottom, then the cauli grits, and top with shrimp. i’ll usually throw some of the trader joe’s everything but the bagel seasoning while joey will top with the tj’s chili lime seasoning. whatever you do, it’s delish.
i mentioned that i am trying to change up some of our dinners, but here are a few of the ones we do have on rotation here:
- spaghetti squash + meat sauce
- one sheet pan roasted chicken sausage and veggies
- loaded wedge salads [there is something deeply gratifying about cutting up a head of lettuce]
- shrimp tacos
- breakfast for dinner: kodiak cakes, eggs, breakfast sausages
