picky-kid approved, everything-free banana chocolate chip muffin recipe!

there’s a title i never thought i’d be writing. you see, i never NEVER cooked until i had logan, and was spurred into chef-hood by two motivations: 1. i now had a kid and i couldn’t be slinging easy-mac for every meal [not that that stops me now since she’s picky as heck and if she wants cereal for dinner, so be it. at least it’s organic.] and 2. i really wanted to clean up my own diet, which means that i was thrust into doing what all good at-home chef’s do: scour pinterest for anything that had “easy” “four ingredient” or “basic” in the title.

couple that with a daughter who just came back allergic to nearly everything except for shellfish [no joke, but that’s a story for another day slash we are opting to have additional testing done], and i’m now looking for “gluten free, dairy free, egg free, tree nut free, soy free” recipes. here is a muffin recipe i tried recently that i think turned out *pretty* good. there are a few things i need to tweak, but the taste is 100.

you can find this recipe on my pinterest board, but i made a few adjustments according to what i had on hand and trying to make it everything-free for logan. i swapped the flour for coconut flour, used half honey half agave [mostly because i ran out of honey and like honey better than agave], and used coconut milk + yogurt in the recipe as well instead of the full dairy counterparts. to be honest, they came out a little crumbly, but taste DELISH.


  • 1 1/2 cups coconut flour [i use bob’s red mill]
  • 1 teaspoon baking soda
  • 1 banana
  • 1 teaspoon salt
  • 1/4 cup honey/agave syrup mix
  • 1 tablespoon vanilla
  • 1 tablespoon coconut oil
  • 1/2 cup coconut yogurt [i use so delicious]
  • splash of coconut milk
  • 1/2 cup chocolate chunks

the original recipe also calls for an egg, which i omitted, but i think it would help the texture and help them be less crumbly. whatever you decide, these are delicious and turned out WAY better than i expected!
